The review of the main types of organizational structures of management which application is most characteristic for Russian enterprises of restaurant and hotel business is presented in the article. As a result of the conducted research, the authors come to the conclusion that practical importance of studying organizational structures of management consists for owners and management of branch enterprises in possibility of increasing the profitability of financial and economic activity due to their optimization.
